Skywalker and the associated estate (PWP, LLC) seeks a talented, creative and experienced culinary professional to join the team for a variety of unique and exceptional events and offerings, requiring menu invention, imagination and originality. The Private Sous Chef will work collaboratively with a team in the PWP culinary program.
The F&B expert must be resourceful and have the bandwidth to present to our guests, 2 or 200 comfortably. She/He will need to be flexible and have the interest in creating private family-style meals to a dietary preferences, as well as be able to create restaurant style food for large numbers, all dining at the same time. She/He is a cross-functional talent and will provide understanding and hands on knowledge of all styles of cuisine. The Chef will exhibit culinary talents by personally performing tasks while seeking to continually elevate the execution and presentation.
At PWP, the Chef may have the opportunity and exposure to partner with the Summit Culinary team, Winery, olive oil and wagyu production.
Responsibilities include:
- Establish service offerings for different engagements (Dinner parties, events or daily Estate Culinary deliveries); Secure purveyors & visit farms; Menu development, costing, recipe testing, wine pairings
- Interest and warmth for creating culinary offerings to the family, working within specific and extensive dietary requests and restrictions.
- As required, participate within wagyu operations, Olive Oil operations, organic garden support, winery operations
- Utilizes interpersonal and communication skills to lead, influence, and encourage others; advocates sound financial/business decision making; demonstrates honesty/integrity; leads by example. Encourages and builds mutual trust, respect, and cooperation among team members.
- Understands team positions well enough to perform duties in employees' absence or determine appropriate replacement to fill gaps.
- Assists in ensuring employees are treated fairly and equitably. Trains kitchen associates on the fundamentals of good cooking and excellent plate presentations. Observes service behaviors of employees and provides feedback to individuals and or managers. Establishes and maintains open, collaborative relationships with employees and ensures employees do the same within the team.
- Solicits employee feedback, utilizes an "open door" policy and reviews employee satisfaction results to identify and address employee problems or concerns.
- Ensures property policies and programs are administered fairly and consistently.
- Displays leadership in guest hospitality, exemplifies excellent customer service and creates a positive atmosphere for guest relations.
- Interacts with guests and/or clients (internal and external) to obtain feedback on product quality and service levels.
- Responds to and handles guest problems and complaints.
- Communicates the importance of safety procedures, detailing procedure codes, ensuring employee understanding of safety codes, monitoring processes and procedures related to safety.
- Participates in the budgeting process for areas of responsibility.
- Grow personal wine education and experiences.
- Knows and implements the brand's safety standards.
- Provides direction for menu development.
- Monitors the quality of raw and cooked food products to ensure that standards are met.
- Determines how food should be presented, and create decorative food displays.
- Recognizes superior quality products, presentations and flavor.
- Ensures compliance with food handling and sanitation standards.
- Follows proper handling and right temperature of all food products.
- Ensures employees maintain required food handling and sanitation certifications.
- Maintains purchasing, receiving and food storage standards.
- Prepares and cooks foods of all types, either on a regular basis or for special guests or functions.
Requirements
Education / Experience:
- Minimum 10 years' previous supervisory/management experience in a kitchen.
- BA Degree or equivalent preferred.
- Demonstrated ability and experience coaching staff and contractors to achieve an environment of cooperation, service, teamwork and trust.

Comensation: $90k-100k
